Our highland cattle grow on grass until they develop the right conformation to enter the food chain. With a relatively short body and old fashioned shape they create beautiful roasting joints as well as large and thick prime muscles perfect for steaking.
Red Ruby is notorious for having a deep depth of 'beefy' flavour. They are small cattle and therefore develop a small carcass. They yield a good amount of muscle brilliant for steaking, as well as a good covering of fat that ensures we create really flavoursome mince.
