REGENERATIVELY FARMING HAIRY COWS & WOOLY PIGS IN HARMONY WITH NATURE
Traceability is as important to us as it is to you. Trusting the produce you are buying is essential for anyone who has a deep ethos for supporting local, British & high welfare meat. This is why we have created this section so you can get to know how we raise our beef here at Springwater Farm.
Firstly you must understand that Jason & myself view our livestock as more than a numbers game which we are trying to profit from. Our animals are respected individuals each with their own personality. We are the type of farmers who vow to know who each individual cow is and who their mother was without having to look at their eartag number.
Our highland cattle are 100% pasture fed for their entire life until they develop the right conformation to enter the food chain. With a relatively short body and old fashioned shape they create beautiful roasting joints as well as large and thick prime muscles perfect for steaks. We believe beef should come from cows who had the right to freely roam and were allowed to raise their offspring until they are mature enough to fend for themselves. Our highlands spend the majority of their lives grazing our organic pastures ranging from ancient woodlands to valleys of permanent pasture. Should any of our cattle have to come indoors over winter to prevent poaching to our soil then they are fed only organic hay produced from Springwater Farm earlier in the year. All of our highlands are slow grown for a minimum 3 years to allow the carcasses to take full marbling. The final product is then hung for 4 weeks to allow optimum maturity of flavouring and tenderness.
