Our highland fold is Pasture For Life certified, grazing only our organic certified pasture their entire lives to fill you with confidence in the meat you are eating.

Firstly you must understand that Jason & myself view our livestock as more than a numbers game which we are trying to profit from. Our animals are respected individuals each with their own personality. We are the type of farmers who have built trusting relationships with our cattle and it is no hardship for us to know who each individual cow is and who their mother was without having to look at their eartag number.
Our highland cattle are 100% pasture fed on our organic pastures for their entire life until they develop the right conformation to enter the food chain. With a relatively short body and old fashioned shape they create beautiful roasting joints as well as large and thick prime muscles perfect for steaks. We believe beef should come from cows who had the right to freely roam and were allowed to raise their offspring until they are mature enough to fend for themselves. Our highlands spend their lives grazing our organic pastures ranging from ancient woodlands to valleys of permanent pasture. Our beef animals will graze outdoors their entire lives without entering a shed because we are fortunate enough to have grazing access to extensive parcels of land, allowing our highlands to freely roam while having a positive impact on our lands soils and ecosystems.
Should any of our breeding herd have to come indoors over winter this is to prevent poaching to our soil & give our older girls (highlands live a long time) a well learnt rest. Indoors our pasture for life ethos continues where they are fed only organic hay produced from the Farm earlier in the year. All of our highlands are slow grown for a minimum 3 years to allow the carcasses to take full marbling. The final product is then hung for 4 weeks to allow optimum maturity of flavouring and tenderness.
This natural process from birth to finish allows the ecosystems on our farm to function as nature intended while providing you with fully transparent nutritious beef from farm to fork.
